13. Sapodilla's Brown Sugar Notes

With its brown sugar-like taste, sapodilla produces a very rich juice with a complex flavor that is both pleasing and challenging. Properly matured and prepared, sapodilla juice tastes distinctly caramel-like with overtones of brown sugar and malt. The preparation calls for precise timing to employ soft-to-the-touch perfectly ripened fruits without overripe texture. The final juice has a rich, dark hue and a thick consistency that one can vary with water. Especially high in tannins and antioxidants, sapodilla juice is tasty and good for your health. Though the juice is sometimes diluted to balance its strong taste, the inherent sweetness means no extra sugar is needed.
